Tom Ham's Lighthouse
Our first beer dinner of 2017 will be an experience to remember. The Harbor View room will be transformed into the inside of the Modern Times tasting room for a 8 course collaboration 'casual' dining experience hosted by our Executive Chef Kyle Kovar and the talented, Chef AG Warfield from Churchills Pub and Grill. Pairing each course with the perfect Modern Times brew.
MENU 1st Course Orderville: Maryland blue crab/crispy chicken skin/mango habanero glaze/micro lemon grass/blistered peppers
2nd course Loma Land: Peppered mushroom bruschetta/carrot top pesto/burnt leek ash/mustard flower/toasted focaccia
3rd Course Haunted Stars: Wild boar & sage meatball/bitter chocolate mole/smoked masa cake/micro cilantro/pickled radish
4th course Symmetric orchestra: Local uni and fruit salad/frisee/dragon fruit and apricot puree
5th Course Fruitlands: Charred pear/vanilla & sage salt/seared duck medallion/blueberry ginger puree/chocolate mint
6th course Blazing world: Moroccan braised lamb shoulder/pea agnolotti/baby turnips/black garlic and pineapple consommé
7th Course Devils Teeth: Pressed pork belly/blood orange honey glaze/pickled onion/citrus segments/roasted beet puree/micro fennel
8th Course Dessert Black house with coco nibs and coconut on nitro: chocolate brownie/coconut fluff/raspberry jam/coco nibs
