KAMONEGI
Kamonegi's traditional Japanese buckwheat noodles are stone-milled, hand-rolled, and hand-cut. Chef Soma, the former executive chef at Chez Shea, learned her craft in Tokyo under a master soba maker. She now devotes her time to perfecting this art using Washington-grown buckwheat and other local ingredients.
