September 19: Bi-Rite butcher Zane Clark will demo how to break down an entire lamb into primal cuts. We will then consult with Bi-Rite chef Wyatt Sandberg about the proper way to prepare and cook each cut of meat.
September 26: Join us for Don Watson's Lamb Part 2: The Feast the following week, where we get the meet the man himself, Don Watson over a beautiful four course meal prepared by Zane and Wyatt.
A little about Don:
Don Watson has 3,000 sheep grazing between 5,000 and 10,000 acres per year across Napa, Sonoma, Marin and Solano counties. In addition to providing milk-fed lamb, Watson's Rocky Mountain Wooly Weeders provides an environmentally sensitive moving service for vineyards and open lands from the Pacific Coast to the Rocky Mountain region.
