Join us for a lively, candid discussion with the entrepreneurs behind four of Chicago's most popular food businesses:

Michael Ciapciak, Owner, Bang Bang Pie & Biscuits
Paula Haney, Owner, Hoosier Mama Pie Co.
Sandra Holl, Owner, Floriole Cafe & Bakery
Elizabeth Madden, Owner, Rare Bird Preserves

Michael Ciapciak is the owner of Bang Bang Pie & Biscuits, an award-winning restaurant with locations in Logan Square and Ravenswood that continue Midwestern cooking traditions and Michael's unique take on hospitality, decadence and cafe life.  

Paula Haney's Midwestern roots and affinity for seasonal, local produce are evident in every handmade pie that her staff lovingly creates. Hoosier Mama Pie Co. began at the Green City Market, and has since expanded to include shops in Evanston and Chicago. She has received rave reviews for her pies and cookbook from everyone including Food & Wine and Bon Appetit.

Sandra Holl and her husband Mathieu started Floriole at Chicago's Green City Market. In 2010 they opened Floriole Café & Bakery in Lincoln Park. Sandra has appeared on Unique Sweets and the Martha Stewart Show, contributed to Bon Appetit and Sweet Paul magazine and was named Pastry Chef of the Year at Chicago's Jean Banchet Awards.

Rare Bird Preserves was founded by Elizabeth Madden, who fell in love with preserving fruit while she was a student at the French Pastry School. The ingredients are locally sourced whenever possible and the fruit is cut, juiced, and zested by hand. The products are crafted in the traditional way in copper pots but result in unique, non-traditional flavors.

The conversation will be moderated by Janet Fuller. Ms. Fuller is a James Beard-nominated food writer, the former Food Editor of the Chicago Sun-Times and regularly contributes to Epicurious and DNAinfo.com.

Our evening will include:
~Crafthouse Cocktails, premium drinks from world-renowned mixologist Charles Joly
~Tasty beers from Begyle Brewing.
~Samples of decadent desserts (and a few savory bites) from all of our panelists

Thanks to all of our super generous sponsors, all proceeds from this event will be used to support Blue Sky Bakery's transitional jobs program for at-risk youth.
