A Meal for Two: You and Your Microbes
Did you know the microbial community living in our intestines weighs as much as our brain, and that this community appears to be associated with almost all aspects of health? Come learn about your gut microbes, and how to feed them, through an interactive cooking class! Students will prepare a nutritious vegetarian Ethiopian-style meal. Then, using the ingredients of this meal as "food for thought" in a teacher-led discussion, they will begin to understand the effect of diet on their gut residents and implications for health. Fee: $25 (2 scholarship spots available)
Instructor: Isaac Elkon, M.S. Isaac recently obtained his Masters of Science from the UW Nutritional Sciences Program. For his thesis, he investigated the relationship between dietary plant chemicals, the gut microbiome, and human health through lab-based work at the Fred Hutchinson Cancer Research Center. He also helped provide nutrition lectures and assisted with cooking classes for the UW study abroad program Food and Culture in the Hispanic World. He is a co-founder of the Beacon Food Forest Permaculture Education Collective, and taught this class at the food forest last fall. His cooking experience includes a year in the kitchen of a local Indian restaurant.
