Sommelier Ted Wilson and founding chef Christine Wells are Metal & Match. They have been painted as a breath of fresh air in the catering world, a fusion of innovation plus years of restaurant experience, and a joy to work with. They come to Polly's Paladar for the first time as this culinary tandem, yet we have felt the savoir-faire of Sir Wilson before as half of Fine & Rare, another remarkable seasoned paladar darling. With him, he brings Chef Christine Wells, who has been described as a magician, transforming traditional into radical. She has been a food photographer, attended the French Culinary Institute in NYC, worked at City Grit, was head chef at Brooklyn Winery, and then head chef at Foxtail Catering. So, yeah.... she's been around the block. We are thrilled to have her with us.

Paladar 47 is inspired by smoke, fire, and ash. We are bringing food back to it's birthplace. Primitive techniques, our ancestors knew intimitely will be our guides. Tender memories forged fireside and rooted in our natures will be translated onto your plates and set before you on this night. Join us.

housemade sourdough bread, black ash sea salt

scallion-ash chipotle carrots, yogurt, toasted pepitas

blistered tomato gazpacho, black olive powder, mezcal

smoked trout, charcoal potatoes, apple smoked garlic

burnt beef, cauliflower-turnip puree, pickled chard stem

bamboo charcoal cake, smoked honey, hazelnut cocoa, figs
