WEDNESDAY 7/11: Sparkling Wines of California

A huge trend in Champagne that's reaching the shores of the US at a rapid pace, these wines showcase the true nature of the grape and terroir by eliminating the final dosage of sugar, used to mash small imperfections in the finished Champagnes, as well as smooth out the final product. In fact, sugars act to hide the true essence of the Champagnes, so Zero Dosage and Brut Nature wines are essentially stripped-down, bare expressions of the grape and soil.
