We admire the world of high cuisine for its use of unexpected ingredients. This week, you'll eat high cuisine for low dollars as we veganize recipes like Red Beet Ice Cream from The French Laundry and Melon Soup with Cucumber Chile Ice from Millenium.*

We're also originating another Tuesday Dinners comfort food recipe - Pigs in a Blanket! We're possibly making history with gluten-free puff pastry and hot-dog-seasoned king mushrooms. We're pretty sure it will melt in your mouth. This week it's all about playing with ingredients and ideas to inspire new ways of looking at food.

Menu:

- Kenyan Melon Soup with Cucumber Chile Ice
(An exotic melon transformed into a cold sweet/savory soup)

- Grilled Figs with Balsamic Reduction on Chard Ribbons
(Local fruit, lightly grilled, with artisan dressing, on local greens)

- Pigs in a Blanket with Coleslaw, Baked Beans and Spaghetti Squash
(This all-American favorite is reimagined with king mushrooms, cashew cheese, and gluten-free puff pastry, served with classic sides)

- Red Beet Ice Cream
(Inspired by Chef Keller's recipe! Served with candied walnuts and walnut syrup.)


*The French Laundry and Millenium restaurants are legendary in the world of high cuisine for their innovative menus and localvore values.

Where do we buy our ingredients?

The primary produce supplier for the Tuesday Dinners is Whittier Backyard Farms, a small start-up farm group in Whittier, CA. Their farming methods are what's known as "beyond organic" -- they create their own compost (including kitchen scraps from the Tuesday Dinners), procure mulch and chicken manure from other urban farms, and sow only heirloom seeds -- chemicals aren't even in the discussion. We're pretty pleased to support them, and to serve you their excellent produce!

This week's menu includes figs, beets, onions, chard, mint, lemons, and garlic greens from Whittier Backyard Farms. You too can invest in their farm and receive a weekly box of produce. Contact Farmer David: david@davidkiang.com.

We'd also like to thank Eric Singley of HM157 for this week's spaghetti squash, Hathaway Ranch Museum for the exotic Kenyan melon, and Iris Marialaki (of Whittier Backyard Farms, pictured) for her cultured sauerkraut, an ingredient in our house coleslaw.

Retailers we buy from in order of frequency: Herbie's Natural Foods in Whittier, Trader Joe's, Whole Foods, and Figueroa Produce. Culturally specific ingredients come from ethnic markets. Wild ingredients are harvested by hand, by us. We've also heard a rumor that Whittier Backyard Farms has some seed starts for wild foods...we'll keep you posted!

We are an experimental kitchen that tests vegan, organic, local approaches to traditional comfort foods every Tuesday at HM157 and beyond. Be our guinea pig for only $15!

You'll sit down with a stranger and get up with a friend at our community table. Our inclusive cuisine welcomes everyone - we can make it gluten-free/soy-free/corn-free, you name it.
