Sunday, April 17th at 6PM well begin de Porres Abril with pisco sours and choros a la chalaca, mussels with lime, salsa criolla, and canchita (roasted Andean corn kernel). Next is salsify. Pablo introduced me to this very special vegetable root a few weeks back, having spotted it at the Hollywood Farmers Market. It will be roasted and served with leeks, salsify chips, blue poppy seeds, and lemon. Solterito follows. Literally the little bachelor, this dish was popularized by the single miners of Arequipa, Peru. Pablos will make the most of spring with fresh fava beans and chickpeas, herbs, spring garlic, and yogurt. Weve chosen arroz con conejo for the main main. Not unlike Spanish paella, it will feature bomba rice, local rabbit, artichokes, English peas, and cilantro. And for dessert: blood orange olive oil cake.
