Bread Course @ Inver Restaurant with Ben Glazer
Catering to everyone from the complete beginner to the confident home baker, the class will introduce you to the basics of bread making; sourdough to brioche, long fermentation to quick and easy breads. Naturally leavened bread will be the main focus as we teach you how to care for and maintain your starter, and in turn make delicious breads with it. We will be stripping away myths and fears to show you how easy baking bread really is no matter age or ability. After the two-day course, you'll leave with an exhaustive knowledge of everything that is wheaten and some of your work to take home. Refreshments and lunch each day will come courtesy of the kitchen at Inver Restaurant and is included in the course fee.
Tutor Ben has spent time at some of the best bakeries around the globe. After working for two and a half years at leading London bakery the e5 bakehouse (www.e5bakehouse.com), he moved to Belgium to help set up De Superette wood-fired bakery in Ghent (http://www.indewulf.be/desuperette/). He has consulted and developed the bread program at several of the UK's best restaurants, including Scotland's own Inver Restaurant. He recently traveled around the US to spend time with pioneers of the modern sourdough movement, including Tartine (San Francisco, CA), Farm and Sparrow (Asheville, NC) and Millers Bakehouse (Oroville, CA).
