Slow Food Napa Valley KALLARI Chocolate Tasting
Slow Food Napa Valley invites its members to a unique Ecuadorian Chocolate Tasting experience with members of Ecuador's KALLARI Association. The KALLARI Association is a self-governed coalition of Amazon artists and organic cocoa producers. The cooperative began in 1997 with less than fifty families and has now grown to over 850 families. Kallari has created sustainable income so its members can fulfill their basic family needs without logging their rainforests or selling their land. KALLARI's story is a giant leap ahead of standard Fair Trade practices, as it achieves higher levels of solidarity and income for all the families involved. KALLARI Chocolate is four times as fair as "Fair Trade".
The chocolate seminar will include the following topics: -Region and Background of the KALLARI Cooperative -Cocoa Harvest and the Cooperative Collection System -Steps in Bean Preparation for Export -Chocolate Manufacturing -Socio-Economic Overview of the Chocolate Industry
As part of the presentation, a wide range of chocolates will be tasted that have been made from different percentages of cacao, cocoa powder, and cocoa butter.
Please bring a bottle of wine or other beverage that you enjoy with chocolate to share at the event.
