Maddy's Dumpling House: The Cambodian Edition
We are back celebrating Cambodian cuisine, our guest Chef, Justin Moser (Sous Chef of Salero) and the newest partner of the Maddy's Dumpling House team, Adam Wendt!

We would like to thank Emily R. for choosing this month's theme. Cambodian, or Khmer, cuisine was a fun and interesting research project. Similar, but very unique, to its neighboring cuisines Vietnamese and Thai, we were able to see how its history and location were influential to the evolution of their cuisine.

Thank you again so much for all the support you've given to us, and we look forward to feeding you!

khar (pork shank, tofu, chopped egg)
samlor machu (shrimp, ginger, culantro, turmeric, pineapple)
kuy teav (soup dumpling w/meatball, fried garlic, scallion)
num pa kon chien (shrimp shumai, sweet sauce, peanut)

mouan ang (roasted duck, charred escarole, grilled pickle)
ansom chrook (brisket, stiky rice, mung bean)
loht chaa (short rice noodles, cabbages, chili, bean curd)
khmer fried rice, adam-made chinese sausage

The Manchester tart is not Cambodian, but the Khmer iced coffee ice cream is. We are bidding a farewell and celebrating the beginning of a new chapter to our dear friend Emily who is moving to Manchester. Cheers!
