The Delectable Story of the Delightful Dosa
Named one of the world's 50 most delicious dishes by CNN NO (between buttered popcorn and potato chips), the dosa is one of India's most ancient dishes, dating back to the 5th century AD. Originally dosas were made only of lentils but at some point rice was added to make the dish that today is everyone's favorite: a flat round sautéed pancake often filled with vegetables and accompanied by sambar, a thin spicy lentil stew, and coconut chutney.
But there are hundreds of variations on this basic theme. In her talk, food historian Colleen Taylor Sen will describe the history of the dosa from ancient times to its many modern incarnations, including a 30-foot-long dosa that holds the world's record!. She'll also guide diners through a South Indian meal.
Colleen Taylor Sen is the author of many articles and three books on South Asian cuisine, including Food Culture in India and Pakoras, Paneer, Pappadums: A Guide to Indian Restaurant Menus. Registrants will receive a copy of this book as part of their registration.
