We all owe Peter Selaya and Buzz Crouch an enormous debt of gratitude.  For 13 years, they have graciously bestowed upon our little town of Nevada City, California incredibly rich and perfectly made food at New Moon Cafe.
Not only that, but they lend me their talent!   I have asked Peter many times to do a Paladar, but when I do, he reminds me that he does one himself every single night....
Touché, Peter, touché.
And so, I steal away his protégés one after the other and let them create gorgeous food for you Paladarians every so once in a while.  And really, you can thank Peter for their overwhelming love of food.  I mean, they each came to New Moon Café with an impressive skill set to begin with, but from what I understand, the man deserves a James Beard Award for reals.
The folks who work at New Moon Cafe don't ever want to leave.  There are rarely positions opened up on their staff and it's for good reason.  The environment is beautiful and the food is the best in town.  This explains why when I asked Jesse how long he and Nicole had been there; he couldn't even recall... he said, "It's been a really long time".  If you've ever had the chance to even peek in through the kitchen window, you would see Jesse Hanshaw and Nicole Regnier waltzing through dinner service with ease and grace (of course they are accompanied by other past Paladar chefs including Tom Bevatori and in the past: Evan Scott, Sasha Scott, and Pepe Diaz. even Truk Jantz has graced our Paladar with his jolly giant presence)

Us Paladarians have been lucky enough to have had Jesse and Nicole cook food for us 2 years ago.  This was back in the years of the "one night Paladars" and it was also prior to hiring any professional photographers, so there is very little evidence at all.  They bought an entire pig from Llano Seco and used the whole thing in every course... Yes, even the dessert (I recall something about maple bacon ice cream). Thank goodness that the Paladar has expanded to two nighters now and can feed twice as many of us at once!  Phew!  
So basically, what I am trying to explain is that we have the dream team back and they are ready to wow you again.  Their last Paladar "This Little Piggy" sold out lickity split!  Make sure to grab your seat as soon as you possibly can!

In regards to the planned menu and the Paladar's potentially confusing title, my humor really shines here.  I figure, you know, it's my living room and my party so I can call it whatever I want!  We knew the event was close to Thanksgiving, but we didn't want anyone to think that they were going to eat turkey and cranberries (however delicious they might be cooked by these two).  We assumed that most of you would be indulging on plenty of L-tryptophan later in the week and there was no need to go with what might be expected.  Essentially, we are giving the bird "the bird". Nicole and Jesse are going to prepare what we are referring to as  "American Nouveau" Cuisine.  This is a style of food, often raw or only lightly cooked, with sauces, and unusual combinations of flavors and garnishes.  It, most often, substitutes light, low-calorie sauces and stocks for the traditional heavy butter-based and cream based preparations.  Although that might be reminiscent of your beloved Thanksgiving meal, rest assured it will be the only comparison.  Bring your parents!  Bring your Aunts and Uncles!  Experience this Paladar with your family since everyone might already be in town.  Or, what the hell, don't bring your family at all and just come solo.  I'll put you at a great table where you just might meet someone new and fabulous!

Biscuit with duck rillettes,
poached quince, and duck bacon.

Spicy consommé with braised beef
short ribs and kimchi.

Persimmon salad with pork belly rillons, bitter greens, pecans, and pomegranate.

Breaded pork shank torchon with celery root remoulade, mashed potatoes, and jus.

Popcorn panna cotta with
salted caramel and caramel corn.

Limited 5pm and 8pm seatings.

Please make note that the most we can sit together at one table is 8 people.  We have two "8 tops" at each seating.  Plan accordingly.
