Dinner at Floriole featuring Werp Farms
For our April dinner, Floriole bakery is celebrating Werp Farms of Buckley, Michigan and their spring bounty that is a sight for sore, winter eyes.
You have probably read "Werp Farm" on menus ranging from Perennial Virant to Brown Trout, Nightwood to Alinea, Publican to Next. The reason so many chefs clamor for their produce is because of the intense care and precision with which Mike and Tina Werp run their 80-acre farm. The salad greens that Floriole features on every sandwich plate were hand-harvested, with scissors, 24 hours before being delivered to the bakery. The love that they show their plants is obvious with every box of tender greens we receive. Werp Farms started in 1978 when Mike, an engineer, returned to Michigan to work his grandfather's property. Over the years they have specialized in greens, herbs, baby root vegetables, micro greens and edible flowers. And it is their attention to detail, organic growing practices and vibrant winter garden that keeps Werp on the menus of locally minded restaurants from Leelanau to Cook County. We couldn't be happier to cook with and share a taste of Werp Farm with you this April.
April 17 7 pm $75 per person excluding drinks, tax and gratuity
