Artisanal Sausage Making
This course will teach the art and history of sausage making as sausages are defined by cultural beginnings. This course will allow a "first timer" to be successful or a seasoned veteran to pick up some new tips.
Topics Covered:
Definition of different types of sausages and the ingredients, spices, and processing which make them unique
Food safety including cooking and cooling recommendations as well as packaging and storage.
Sausage sampling will give participants a culinary experience and exposure to processed meats from around the world
Working in teams of 2, participants will make a fresh breakfast sausage and a fresh linked sausage
Students will receive a course outline and spice pack to recreate sausage formulations created in class.
