Preserving Heirloom Apples with Shakirah Simley
Savor the flavors of fall! Join Pollinate Farm & Garden as we welcome Master Preserver and Bi-Rite Market's Canner-in-Residence, Shakirah Simley for a hands-on class as we learn to preserve the complex flavors in heirloom apples!
Over 4 hours we'll chop, slice and simmer until we get lovely jars of tart and sweet fruit. We will cover an introduction to canning theory, safety and preserving basics, and you will learn Shakirah's canning secrets for fantastic autumnal treats! We'll start with a tasting apples in a rainbow of colors, flavors and textures. Then we'll to work on preparing, cooking and jarring some goodies. We'll also enjoy a hearty seasonal snack during our Q&A break.
As any preserver can attest, September is the time to can fruit so that the flavors develop in time for holiday giving. When it comes to homemade gifts, it's definitely not too early to start your holiday making! Participants will take home recipe packets, samples of our in-class concoctions and a boost of canning confidence. Bring a sharp knife, apron, closed toe shoes your canning questions (and a friend!).
About Shakirah: Shakirah Simley is the Community Coordinator and Canner-in-Residence for the Bi-Rite Family Businesses. She wears a number of hats including: developing jams and preserves for its PUBLIC Label line, cooking instructor at 18 Reasons (its educational arm) and is in charge of giving and community outreach, with a penchant for programs that support youth empowerment and increase access to healthy food. Before arriving on 18th Street, Shakirah attended the University of Gastronomic Sciences in Italy on a Fulbright scholarship, where she received her Master's degree and studied under Italian canners. She was recently named one of Zagat's "30 under 30: SF Bay Area Up and Comers." She loves to talk food justice, policy, jamming, school food and the perfect cappuccino.
