Cidermaker Dinner Series - Cidrerie du Vulcain
All the fruit found in Cidrerie du Vulcain's ciders are located in the town of Fribourg, Switzerland, where cidermaker Jacques Perritaz's facilities are located. The ancient varieties of apple, pear and quince are found on high-branched, untreated trees. The Fribourg terroir, with its cool climate and diverse soils, provides for beautiful nuances in the aromatic expression of the Vulcain ciders, an effect that is only enhanced by the old age of the trees.
Jacques' cuvées are partially fermented sparkling ciders in the French style of cidermaking. They are wild-fermented, lightly filtered, and lightly sulfured at the time of bottling.
The cidrerie is named after the Vulcain butterfly, which accompanies the apple harvesters in the fall as they go about their work.
Join us for a three-coursed cider-paired meal. Peter Wasserman, the cidermaker's representative, will be present and pouring ciders.
