Rob Brown came to the Paladar with our beloved Chef Dany Lamote of Todos Santos, Mexico via Canada.  It was the very first time that Dany had been to the foothills to cook food for Paladar members.  He needed a trusty crew (as we all do) so he brought Rob.  Dany knows talent and he knows professionalism.  Trust me when I say: If Chef Dany Lamote wants you on his team, you do it.  You do not hesitate and you run in whatever direction the job is as fast as you can.  Once you arrive, out of breath and amped up, you'd be greated with the most relaxed and serene vibe you've ever seen in a professional kitchen.  But that's exactly why you hustled to be the one by Dany's side.  Rob Brown fits that bill to a tee.

They worked together in 2011 opening Chef Dany Lamote's Cilantro Mountain Cafe in Banff, Alberta.  If any of you were lucky enough to have attended Dany's first Paladar (Dia De Los Muertos) you might remember the incredible food, but also his sous chef.  He's that guy.

This towering and carefree friend of Dany's impressed me with his "take charge" attitude and he had that ever sought for mentality of hitting the curve ball, rolling with the punches, and making lemonade out of lemons.  Rob even whipped up some duck confit in all of his spare time.  Seriously, he solved ALL of the problems and worked his ass off.  

That was nearly two years ago.  

Now it's Rob's turn to call he shots. His dream is to create a classical style, multi-course meal (5-6 courses) using the best available local ingredients.  It will be a reflection of what he took home from his time in culinary school at the SAIT Professional Cooking Program as well as his time at Blink Restaurant and Bar in Calgary, Alberta where the menu changed weekly according to seasonal produce.  He also worked at Lake O'Hara Resort in the Yoho National Forrest serving the likes, often times, of the one and only Joni Mitchell who spent a lot of time there.  It's a beautiful place and she is a beautiful woman, so I think it's worth a mention.  In Chef Rob Brown's words, "It's the most basic form of service to our fellow man, 'Here, eat this food'.  It's so simple".  His approach to preparing food mirrors that attitude and you will be able to taste it, thus making his dream a reality.  

This is the first time that the Paladar has had a chef come in from out of town and plan to stay for a week prior wanting to discover local farms and develop a menu strictly based on what he can find here and now.  A noble challenge, especially for someone who doesn't live here.  It's a good thing that I know some farmers!  You know who you are!  I am thrilled that someone would find the time and go through all the effort it takes to travel across the country to cook for us.  The Paladarians are a very lucky bunch.

Chef Rob Brown can accommodate vegetarians, folks who require a gluten free meal, and/or folks require a dairy free meal.  You're in good hands. If, perchance, you have a different intolerance or allergy, please let me know and I will run it by the boss.  Of course, I will respond as soon as I know if your request is a possibility.   Please email megan@pollyspaladar.com for dietary requests post seat purchase.
