Toronado Brunch featuring Monkish Brewing Company
We're excited to be featuring the outstanding beers from Los Angeles brewery, Monkish. This 8 course brunch will also include a specialty glass for you to keep. Menu, beer, and guest chef(s) as follows:
Foie Gras mousse/ sauternes/ Blackberry/ Miso-cured fig/ puffed rice/ peach/ Maple flakes/ Brioche Funky Habit- brown saison w/brett. earthy, fruity, strawberry jam, funk and brett flavors. Chef Mike Arquines
Beets/ Butternut Squash/ Quinoa/ Edemame/ Kale/ Herb Goat Cheese/ Citrus/ Lemongrass/ Little Story- brett saison (3.9%Abv) dry hopped with Citra. Very light bodied, big honeydew melon flavor, smells like a bag of citra, mild brett character. Chef Steve
"Seafood Dirty Dog"-Lobster + Crab Roulade, Smoked Pimenton Shrimp Chip, Garlic Creme, Tarragon St. Citra- belgian pale ale single hop with Citra. All Citra in this beer. It is tropical and danky. a basic pale ale recipe w/our house belgian yeast strain. mostly dry hopped so the nose is brusting with Citra! Chef Phil
"Carlsbad Oyster In Bengali"-yogurt, Punjabi curry, cauliflower, peas, raisins Apricot Kisses- barrel-fermented saison w/apricots. apricot skin, dry, mild brett character, acidity on the finish. Vanilla and oak flavors. Steve Iona
"White Corn Gnudi"-Chicken skin/snap pea/ tomato relish Selah- Farmhouse Saison w/ Brett dry hopped w/ Galaxy and Sorachi Ace. Tropical, lemony, funk, horse blanket. Big Nate
Wild Boar Rib- Slaw/ Hooped BBQ sauce Beer. Hops. Love- Belgian style triple dry hopped with citra and nelson. big hoppy nose, malty character like a double or triple ipa. a good amount of rolled oats was used to give this beer a smooth mouth feel. Chef Brad Florent
Elian Cheese Course- Rara Avis- rye & spelt saison w/brett and lacto, dry hopped w/ galaxy and amarillo. big tropical brett/hoppy nose, mild acidity from the lacto. crisp and refreshing.
Cinnamon eclair/ Dulce de Leche/ Candied pecans/ Coconut cake/ Sweet corn ice cream Caffe delle Vita- belgian style triple w/vanilla beans, pistachios, and portola coffee. Rich iced coffee, vanilla. Rich flavor and mouthfeel from the fat of pistachios. Chef Mike
