Beyond the Canning Jar - City Fruit Fall Series: Poaching, Roasting Braising
Cooking fruit deepens flavor and changes texture, making it a delicious and healthful way of eating fruits. In this demonstration discover the basics to poaching, roasting and braising a variety of fruits and then see those techniques come to life through a myriad of desserts including: Red wine poached pears with Theo chocolate ganache, poached apples with apple consomme, Rum and brown sugar braised pineapple, and roasted almond-filled peaches. Chef Laurie Pfalzer of Pastry Craft will demonstrate that these are versatile and simple recipes that with the correct technique can easily be prepared at home.
