Noodle Lab #2: ITALY
As noodle lab turns to Italy, we will make two regional noodles that require little more than a knife. First, we'll have fun making pici, a simple and ancient noodle from Tuncany. Forming pici draws on skills you probably learned in kindergarten making snakes out of play-doh(bet you never thought that would come in handy). Next, we'll learn to make (and pronounce) scialatelli, a fat noodle of recent invention from Campania. Scialatelli has flavors mixed right into the dough, opening new possibilities for creative dishes. We will finish by cooking, saucing, and eating our creations.
Noodle Lab2 will be taught by Andrew Pimlott, who got to know pici, scialatelli, and other members of the pasta family at Quince Restaurant.
