There are two sessions available for this class both availabe on July 5th. The morning session runs from 8:45 AM to 12:45 PM. The afternoon session runs from 1:45 PM to 5:45 PM

9:45 - 10:45 AM Workshop 1: Uncapping the mysteries of cider & perry  an introduction to the sensory evaluation of the products and their aromas & flavours. Types & styles of cider & perry.

10:45 - 11:00 AM Refreshments

11:00 - 11:45 AM Cider & Perry Production From orchard to glass  how the products are made. Sources & production of flavour attributes. Potential sensory faults. Pairing and use of cider & perry with food.

11:45 - 12:30 PM Workshop 2: Sensory evaluation of cider & perry. Assessing product quality.

Your Tutor

Drawing from over 25 years of practical experience, Peter Mitchell is a highly regarded, qualified and internationally recognised authority in cider & perry making and tasting. He is a professional trainer and presenter, acts as an advisor to clients across the world, is a UK and North American competition judge and an author. He is also an award-winning producer in his own right and produces a range of "Out of the Orchard" products including perry, cider, fruit wines, juices and speciality vinegars from The Orchard Centre base in Hartpury, Gloucestershire.

Peter runs his own specialist training and advisory business - Mitchell F&D Limited, which includes the highly regarded Cider Academy. Through Taste & Explore, the company has operated expert-led cider tours within the UK and can organise workshops, short courses, events, tutored tastings and other activities for all those (professionals and amateurs alike) who have an interest in, or want to find out more about cider and perry.
