The beauty of "Kaiseki"
"Kaiseki" is one of the styles of Japanese cuisine, a course style Japanese cuisine made of various seasonal ingredients and cooked by variety of cooking methods. With monthly theme based on Japanese culture, the Japanese Kaiseki chef, Hiro Tawara will serve you a beautiful and delicious course of 5 dishes including a dessert. The theme of June event will be Plum and Hydrangea. June is a part of the rainy season in Japan and it is also a plum season, so we call the rain in June "Plum Rain". You can see Hydrangea blooming everywhere in June as well. So Plum and Hydrangea are very popular theme of Japanese cuisine for June.
This time, I am going to serve "Kaiseki" for you to enjoy the month of June along with this theme and I am going to use lots of local and seasonal ingredients to cook this "Kaiseki" course. I hope you will enjoy it.
Appetizer: "Hisui" Eggplant with white sesame sauce
Soup: Cream of Local Broccoli soup with seasonal vegetable
Grilled dish: Grilled Copper River Salmon (Marinated in sauce), Hydrangea shaped squid sushi
Rice Dish: Oregon pink shrimp and seasonal vegetable tempura on rice in hot green tea dashi soup.
Dessert: Plum Sake and Parfait d'amour jerry and Yogurt Blanc-manger
