Meat Workshop II
Spring is here and so is spring lamb. Spring lamb is an Easter tradition around the world. In this hand-on class, you will learn how to prepare spring lamb with peas, an integral part of the the traditional Southern Italian Easter meal. You will also learn how to handle other cuts of spring lamb, such as should chops, perfect for a quick and flavorful worknight dinner. Meat purveyor: Mint Creek Farm. Mint Creek Farm is owned and operated by Harry and Gwen Carr. They are a 230 acre, Certified Organic, grass fed livestock farm. The farm is located next to Stelle, Illinois and 80 miles south of Chicago. They raise livestock for meat, turkeys for meat in the fall and winter, and keep flocks of ducks and chickens for egg production. Most of their farm products are sold direct to customers at farmer's markets in Chicago.
