The Plate Spins: New Directions for Healthful Cooking
A panel discussion with chef Sarah Stegner of Prairie Fire Chicago and Prairie Grass Cafe, Northbrook, Wendy Pashman of Entertaining Company, Renee Zonka, Managing Director and Associate Dean of Kendall College regarding how restaurants and food service groups are meeting the needs of health-conscious guests. This will be followed by a dinner featuring recipes from Mary Abbott Hess' new book Essentials of Nutrition for Chefs. There will also be a book-signing for those interested in seeing what chefs and food writers should know about nutrition.
