Kansha: Japanese No-Waste Cooking
Kansha -- or, appreciation -- expresses gratitude for nature's bounty and the efforts and ingenuity of those who turn nature's gifts into marvelous food. The spirit of kansha, though deeply rooted in Japanese Buddhist philosophy, can be experienced and practiced by anyone, anywhere. One way of demonstrating appreciation, practicing KANSHAcooking, is to use food fully, with no waste.
This dinner-seminar, led by Elizabeth Andoh, author of KANSHA: Celebrating Japan's Vegan & Vegetarian Traditions (Ten Speed Press, 2010) will include demystifying staple Japanese pantry items, tasting ingredients, a little hands-on learning, and enjoying a simple meal of miso kenchin, black rice with green soybeans, crispy gourd chips, sweet, spicy, and tart Sun-dried radish and carrot tops in nutty tofu sauce.
