The Adobo Experience (the Experiment Continues) w Chef Romy Dorotan + Amy Besa
Adobo -- a tangy vinegar and garlic braise / stew -- is the national dish of the Philippines. There are probably as many variations on the dish as there are islands in the Philippines. It is a dish that sparks lively "discussion" among Filipinos over the best way to make it, and is open to infinite interpretations.
In this class, Romy Dorotan and Amy Besa, authors of "Memories of Philippine Kitchens", will teach students how to make a few different adobos. We will learn to make a "classic" adobo, as well as variations of the vinegar braise: beef short rib, pork spareribs and quail adobos.
Afterwards, we will sit down to a lunch of comforting, flavorful adobo with rice and sides.
