Coconut Milk and Banana Leaves, with Chef Romy Dorotan + Chef Perry Mamaril
Learn to cook with coconut milk and banana leaves in this Philippine cuisine-based class. Chef Romy hails from the province of Bicol in the Philippines, which has an abundance of coconut trees and incorporates coconut into its cuisine.
In this class, you'll learn to extract milk from and grate fresh coconut. We'll also have some hands-on time making Filipino dishes that use banana leaves as a wrapping: Kapampangan tamales (rice-based tamales from the Pampanga region of the Philippines), fish wrapped in banana leaves and suman sa ligia (steamed sticky rice).
After cooking, we'll sit down to a lunch of everything we make in the class.
