Starving the South: How the North Won the Civil War with Andrew F. Smith
On the 150th anniversary of the beginning of the Civil War...
Culinary Historians of New York and Farm City Chautauqua at 61 Local present: "Starving the South: How the North Won the Civil War"
From the first shot fired at Fort Sumter on April 12, 1861, to the last shot fired at Appomattox, food played a crucial role in the Civil War. The Confederacy collapsed because it couldn't feed its armies. Learn how the North mobilized its agricultural resources, while the South did not, ultimately leading to the Union's victory. Also included will be a discussion of the crucial difference New Yorkers played in the outcome.
A book signing will follow the presentation. In honor of the anniversary, we'll be tasting authentic period dishes.
Andrew F. Smith has taught food history at the New School University in Manhattan since 1995. He is the author or editor of 18 books, including the most recent, Starving the South: How the North Won the Civil War and Potato: A Global History. He serves as the editor in chief for the Oxford Encyclopedia of Food and Drink in America, and has written more than 300 articles in academic journals, popular magazines, and newspapers: http://www.andrewfsmith.com.
