SLOW U: Good Meat with Author Deborah Krasner
"Good Meat - The Complete Guide to Sourcing and Cooking Sustainable Meat" is the new book by award winning cook book author, Deborah Krasner. It is the field guide to finding and cooking meat produced from sustainably and humanely raised, pastured livestock. "Farm Meat," as many are beginning to call it, is full of flavor, healthier for eaters and the environment, and increasingly available, directly from regional farmers, at farmers markets,like Greenmarket,and environmentally conscious local butchers, like Tom Mylan, of the Meat Hook. Deborah, teaming with our gracious hosts, Tom and Harry Rosenblum of Brooklyn Kitchen, will talk about the tasty good meat movement and what it means to the environment, the way we cook, and our taste buds. To help make Deborah's points, Tom will serve up beef "sashimi" tastings to demonstrate the flavor and texture qualities of cuts from around the animal. The beef sashimi will be accompanied by sake provided generously by Henry Sidel, founder of Joto Sake, a premier importer of artisanal sake.
Good Meat, containing more than 200 easy-to-do, nose-to-tail recipes, will be available for purchase and signing by Deborah. Proceeds from this event will benefit the programs and activities of not-for-profit Slow Food NYC, including the Urban Harvest programs of good food education for NYC kids.
