Salt of the Earth
We use salt to season our food, to cure foods, create flavored crusts and make sweet foods taste even sweeter. Its influence is ubiquitous, even in our language; salt is the source of the words salary and salacious. Taught by an old salt herself (Renee Marton), this class will cover the history and chemistry of salt, include a taste test of different sea salts from around the world, and offer some light, hands-on cooking to showcase the properties of salt. A maximum of 8 participants will enjoy food and wine and go home with recipes and handouts focusing on salt.
