SLOW U: The Locavore Hunter - Geese Gone Wild!
Do you find yourself looking for sources of meat that are local, free range, hormone and antibiotic free? New York State recently announced a plan to control its Wild Goose population by Euthanizing 170,000 birds and disposing of their bodies. An enormous waste of food according to locavore hunter, writer, and instructor, Jackson Landers.
Join Slow Food and Jackson Landers for an afternoon of eating Canada geese and discussing how to safely hunt, butcher and cook this traditional food - even if you are an apartment-dwelling urbanite. We will be cooking and eating geese hunted just for this event.
Jackson will demonstrate how to butcher a goose while local chef Leighton Edmondson will prepare the cuts for the class to taste. Tasting will include pairings with New York state wines.
Proceeds from this event will help support the activities and programs of Slow Food NYC.
