"Noche Buena: Holiday Treats of the Philippines"
Noche Buena is a highly anticipated event in Filipino households. It refers to both Christmas Eve and the traditional feast families come home to after Midnight mass. As with many Philippine holidays, food plays a prominent part in creating a festive atmosphere and bringing loved ones together.
Traditional Noche Buena foods represent the bounty of international influence on Philippine food. Dishes served range from Filipino kakanin (native desserts) and lechon (roast pig) to Dutch cheese, Spanish ham, American fruitcake, and Chinese pancit (noodles).
In this class, we will learn how to make a selection of traditional Noche Buena treats: ensaimada (Philippine brioche), bibingka (rice cake), Christmas ham, tsokolate (hot chocolate) and salabat (ginger tea). After the class, we will sit down to a lunch of everything we cook and bake, plus arroz caldo (chicken rice porridge), vegetables, and ice cream. Bring your appetite, your curiousity, and your questions! Discussion is welcomed and encouraged.
