Butchering a Heritage Pig
At 11:00 AM, on Saturday, March 14th, Chef Thomas Schneller will butcher an entire heritage pig raised at the Montgomery Place Orchards. The demonstration will last approximately 2 hours plus with an opportunity to buy a share of the pig as it is butchered. Purchase of a share is optional and a custom-cut piece of pig will be sold based on the price list posted at the event. Each attendee that would like to take part in the purchase of a share will select a random card with a number on it. Details will be explained at the butchering demo. Chef Schneller will explain the different ways of butchering a pig based so as to give the shareholder what they are looking for.
Chef Schneller has over 30 years of experience in the world of butchering as well as being a chef, educator and author of a book on the topic of meat. He is passionate about sharing his knowledge about meat with others. He may have copies of his book with him for those that are interested.
