CORE presents ... Maásim: The Unique Role of Sourness in Filipino Cuisine
Maásim (sourness) is characteristic of many beloved Philippine dishes: from adobo to kinilaw, sinigang to dinuguan. It is this flavor that distinguishes Philippine cuisine from that of its Southeast Asian neighbors, as a dominant flavor. As NY Times food critic Frank Bruni wrote in his review of Amy and Romy's previous restaurant: "Cendrillon favors sour notes, which it hits so hard and often that you experience a kind of taste revelation, realizing as never before just how far into the background of most cuisines these notes recede."
This class will focus on 2 typical Philippine dishes that are maásim: adobo and sinigang. We will do a vinegar tasting and learn how to make these two dishes. Bring your appetite, your curiousity, and your questions! Discussion is welcomed and encouraged.
