Sandwich Lab 02: FILLING
It's bologna (or baloney) to you. Mortadella to the Italians. Delicious to everyone? You bet it is! And you're gonna learn all about it at Sandwich Lab 02. We've got Bi-Rite butcher Morgan Maki in the house to lead you through making emulsified sausage. That's right - you're making sausage! Then, over house-made mortadella sandwiches, Maki, who is also a history buff, will explain the origins of this workingman's lunch. It's a tale of class, pig, and culture. We'll have beer, too - the drink more common with baloney than bologna.
Co-hosted by meatpaper's Sasha Wizansky and Bi-Rite's Susan Kim, Sandwich Lab is a 4-part series intended to get to the bottom of sandwich-mania. Attendees will learn about the sandwich from the outside in, make and eat many different sandwich types, and investigate why we love sandwiches oh so much. Be prepared to get your hands dirty!
