Butchering, Cooking and Preserving a Duck
Underground Food Collective will be teaching a class on how to utilize a duck for the home kitchen. We will be learning how to fully butcher, cook and preserve a duck. Each participant will get their own duck (that you will be able to take home) and learn how to make pâtés, confit, seared breast, stock and sausage. These ducks come from Avoca, WI and are raised on pasture and fed a diverse diet.
The class cost is $70 and you will be able to take home a duck that you helped butcher.
We will be providing some snacks as well as a light meal. Madison Sourdough will provide a beverage and bread.
Aprons and towels will be supplied during the class. If you have a knife or knives you are comfortable with and love to use, please bring them with you. We will have sheets of information at each station that will cover what we are doing and give you recipes for any food that we cook or prepare.
We will be in a professional kitchen so please wear flat shoes and the appropriate attire. Full participation is recommended, however if you only want to watch and ask questions you are welcome as well.
