The Foundations Dinner Series

Please join Chef Maxime Bilet, co-author of the James Beard Award winning cookbook Modernist Cuisine, for an evening of imaginative cooking, science and storytelling in his creative space located in downtown Seattle. The Imagine Food team is pleased to introduce our collaboration with the brothers, Seth and Zachary Pacleb. These extremely talented young chefs will be assisting Chef Maxime in the culinary operations at the Imagine Food space.

In honor of this collaboration Maxime, Seth and Zach, will be presenting a series of dishes that represent some of the most important flavors, textures, and aromas that have defined their latest vision for Modernist Cuisine. Guests will leave with signed copies of the recipes developed especially for this evening's exclusive event.

We draw our inspiration for what we do from our foundations: our childhood, our journeys, and the central elements that define our identity.

Take a trip to New York and Paris, via Hawaii, rediscover your first oyster, experience grandma's handmade lumpia, the flares from the bacon fat over the campfire, first bites of crispy fish on the coast of Málaga.
