Oregon Cheese Guild's Cheesemaker Education Day
Oregon Cheese Guild's Education Day focuses on topics important to the region's artisan cheese makers.
Marc Bates will discuss what it takes to pass 3rd party audits. Based on his experience from pre-audits in Oregon, he'll summarize where artisan cheese makers are ahead and which areas they generally need to improve.
Frank Barcellos will discuss changes to current food safety regulations that may impact artisan cheese makers.
Lisbeth Goddik will present a research study that focused on impact of terroir on milk and cheese characteristics and the link to native lactic acid bacteria.
Steven Tate, Goat Lady Dairy, will share his life long experience on what it takes to operate a financially sustainable artisan cheese company.
A panel of cheese mongers and retailers will discuss trends of what is hot and not so hot artisan cheeses.
We'll end the day by tasting a selection of 2014 award winning cheeses. Besides the technical session, this is a great net-working opportunity for all current and future artisan cheese makers in the Pacific Northwest.
