SWAMP THINGS New Orleans Cuisine
The Hill Station Community Cafe is hosting this one off unique event on Saturday 19th October when musician and chef Alex Mackenzie brings us SWAMP THINGS!
Alex has always been intrigued by the vibrant melting-pot culture of Louisiana, and instantly fell in love with the food when he travelled to New Orleans late in 2012. After recreating some of the dishes for friends, it became clear that London needed a decent outlet for this rich tradition of food which, for so many in this city, is still largely unfamiliar. And so came the idea for Swamp Things - bringing a little of the Big Easy to the Big Smoke!
Items on the menu will incude Starters: Shrimp & Grits Aubergine & Grits (v)
Mains: Choice of Gumbo served with rice -Seafood -Chicken Andouille -Gumbo Z'Herbes (v)
Pudding: Bananas Foster bread pudding with ice cream
and to wet your appetite Alex writes, "Shrimp and grits is a classic Louisianan dish of shrimp cooked in sherry with Andouille sausage (a spicy smoked sausage), served on top of grits, a creamy cornmeal preparation not dissimilar to polenta. A real favourite, and aubergines are a fantastic alternative for vegetarians. Gumbo is a soupy stew, fortified with roux prepared the Lousiana way - cooked until it's dark and deep with nutty flavours. The aromatic Gumbo Z'Herbes is made from several kinds of greens, and we serve it topped with a poached egg and crispy kale. Bananas Foster are classically flambé-d in rum and brown sugar, and our twist is to pair this heavenly dessert with another New Orleans favourite - bread pudding.
