The Basics of Brewing: Chinese Tea Infusion Techniques, a hands-on workshop
Learn one of the traditional Chinese methods of brewing tea in this interactive hands-on workshop exploring the basics of gongfu cha, or "tea with right effort".
For many tea drinkers gongfu cha has become the method of choice for preparing tea. We'll explore how this practice of bringing our full attention to the brewing process allows us to get the most flavor out of our tea, and to slow down our bodies and minds so that we can experience tea with all of our senses.
Together we'll infuse and taste five different teas as we focus on the gaiwan, the small covered bowl that's commonly used in gongfu cha. You'll have step by step instruction on how to brew and serve tea with a gaiwan, and well use the gaiwan to delve into the spectrum of flavors, aromas and sensations of the tea we brew. Every participant will have the chance to brew and serve multiple infusions.

TEA MENU: Well be brewing and tasting these teas:
Green Tea: Nilgiri Mao Feng, a green tea from southern India.
White Tea: Aged Shou Mei, a 5-year aged version of the popular Shou Mei, richer and mellower than younger white teas.
Oolong: Lishan Tie Guan Yin, grown high on Taiwan's famous Lishan Mountain.
Black Tea: Guan Yin Hong, from Anxi in China's Fujian Province.
Fermented Tea: Aged Liu Bao, a fermented tea from China's Guangxi Province.
