Typically when we think of Mexican food, we think of burritos, enchiladas, and cheese-laden fare. However, Mexican cuisine varies greatly from region to region, and it can be light and refreshing. We'll focus on some lesser known dishes and old favorites. Recipes come from the Yucatan, Veracruz, Baja, and Central Mexico. Together we'll create a complete meal elaborate enough for a fiesta but simple enough for a weeknight dinner: vegetable soup with lime; white fish in a tangy red sauce; red and green radish salad, and secret-ingredient guacamole with crudités. As they say in Mexico, buen provecho!
