Locally grown eggplant is abundant in the summer, but what to do with all that bounty? Italian cuisine makes the most of eggplant, and this class will inspire you to do the same! We will make an appetizer of thinly sliced eggplant, pan-fried and oozing with fresh mozzarella; caponata crostini; roasted eggplant and tomato salad, and stuffed eggplant with prosciutto and provolone.

This is a demonstration-style class. Students will enjoy a generous taste of each recipe.

Parking is available on the first level of the parking garage at 28th & S streets. After 6pm all levels of the garage are available.
