Beer-washed cheeses have their origins in monasteries, and both beer and cheese are derived from a common shared ingredient - grass! As a result, beer and cheese complement each other in both aroma and flavor, while the carbonation in beer also lifts the palate and brings out many nuances in the cheese. Sacha shares her own unique personal recipe for beer-washed cheese that makes a class that is perfect for beginners as well as for advanced cheesemakers ready for extra challenges. She will guide you in the alchemy of creating a beautiful semi-soft cheese and combining the unique flavors of a spontaneous wild fermentation lambic-style ale.
