Gnudi are not pasta, not gnocchi, but they are light, fluffy and delicious. Gnudi are essentially ravioli filling without the dough wrappers. If you like gnocchi, you'll be a fan of gnudi, too. We'll make spinach and ricotta gnudi with sage butter; ricotta gnudi in a pomodoro sauce, and Swiss chard ricotta gnudi with mushrooms.
