Vietnamese Cooking and Market Tour
Tour Vietnam Without Your Passport --this Slow Food OC sponsored tour takes you on a wonderful journey to a Vietnamese market where you learn more about the glorious produce, live seafood, and cookware; then we return to Xanh Bistro to see the exotic ingredients we purchase, transformed into delectable dishes, with a chance to taste this light and healthy yet flavorful cuisine. Come and join Chef Haley Nguyen on this exciting and educational experience. Well start out at a local Vietnamese market, buy the ingredients and come back to Xanh for the demonstration hands-on regional Vietnamese cooking class, then savor a scrumptious multi course dinner. You may bring your own alcohol to consume at the restaurant or buy it there for an additional charge.
Monday July 13 -- Schedule of market tour, NON-VEGETARIAN cooking class and dinner: 6:00 pm: Meet in front of the market and tour the market (address follows) 7:00 pm: Go to Xanh Bistro for cooking class Hands On Cooking Menu: Rice paper rolls with grilled pork Banana blossom salad Simmered fish in clay pot of black pepper & soy reduction 8:15: Eat dinner. Dinner includes: rice paper rolls with grilled pork, cucumber and rice noodles, banana blossom salad with shrimp & Vietnamese mint, simmered fish in clay pot of black pepper & soy reduction, sauted seasonal Vietnamese greens with garlic, tapioca pearl and grilled seasonal fruit. 9:30 pm: end of event
Monday July 20 -- Schedule of market tour, VEGETARIAN cooking class and dinner: 6:00 pm: Meet in front of the market and tour the market (address follows) 7:00 pm: Go to Xanh Bistro for cooking class Hands On Cooking Menu: Lotus roots salad with Asian celery, mint & cucumber Kabocha squash soup with coconut milk Braised tofu with tomato and pineapple 8:15: Eat dinner. Dinner includes: Lotus roots salad with Asian celery, mint & cucumber,Kabocha squash soup with coconut milk,Braised tofu with tomato and pineapple,Grilled eggplant with purple parilla & scallion and Vegan soy cheese cake. 10:00 pm: end of event

About Haley Nguyen Trained at the apron strings of her grandmother, Haley learned to cook at the tender age of 10. After immigrating to the United States with six brothers and sisters, she obtained a Bachelor of Science degree from Indiana University in 1984. While pursuing other endeavors, her passion for food and cooking never subsided.
Haley started her culinary teaching at the Cooking School of the Rockies in 1994. Shortly after moving to Southern California, she instigated and implemented the Asian curriculum for the Art Institute of California in Santa Monica in 1999. To complement her classroom instruction, Haley leads culinary tours to Southeast Asia, one of which was aired on a Food Network segment titled Cooking School Stories in March 2002.
In addition, Haley conducts local market tours to Little Saigon California, the largest Vietnamese community outside of Vietnam. Haley also presents cooking seminars with topics including Healthy Asian Cuisine, and Asian Ingredients 101 to groups such as: Los Angeles Museum of Art, Institute of Food and Wine, Women Chefs and Restaurateur, and Les Dames dEscoffier.Haley has contributed to the Orange County Registers food section as well as cooking web videos, she also appeared in a Vietnamese language cooking show on Saigon TV in Orange county. Haley also owns a restaurant, Xahn Bistro in Fountain Valley, where the cooking classees will be held.
