Here is our Valentine's Day Dinner menu for this romantic event:
Amuse-bouche
Foie gras and morel arancini over chevre mousseline with vincotto and chives.
Windridge Cider Pork Belly
English teacake spread with walnut butter and topped with braised pork
belly.
Accompanied with dried cherry jus and microgreens.
Cherry Borscht
Braised red beets and cabbage, lamb, carrots, potatoes, and dried cherries.
Garnished with dill crème fraiche.
Winter Vegetables
Variety of beets, rainbow carrots, radishes, mushrooms, baby herbs, and
edible flowers.
Raw, pickled, oven roasted, and pureed
Golden Tile Fish
Pan seared over parsnip, potato, and dill puree alongside Brandons pickled
asparagus.
Finished with Meyer lemon foam, paprika oil, and dill fronds.
Winter Fruits
Blood oranges, tangelos, Meyer lemons, grapefruit, and kiwi.
Sliced, pureed, bruleed, zested, and juiced
Mole Negro
Confit duck leg, gigante bean and winter green cassoulet, and Oaxacan black
mole sauce.
Sprinkled with toasted sesame seeds.
Red Salad
Radicchio, red endive, lollo rosso, blood oranges, bruleed grapefruit, walnuts,
and ricotta.
Finished with pomegranate arils, orange blossom water vinaigrette, and purple basil.
Ricotta Cheesecake
Citrus zest, Gran Marnier Chantilly, and tangelo chocolate sauce.
