Pasta class series with Francesca Tori from Bologna
flour+water is honored to welcome Francesca Tori, daughter of Raffaella and Marcello from Bologna, Italy.
It has always been their family way to engage others and introduce them to the Italian culinary world. Growing up alongside her 'nonna and 'bisnonna,' Tori harnessed the craft of making hand rolled pastas and continued her journey by attending a pasta laboratory to refine her skills. Now she is in the States to share her knowledge.
For a rare, three-day series in October, guests will have the privilege of learning to make authentic, hand rolled pastas from the source itself. The evening will begin at Salumeria, with a reception of house cured meats and cheeses. Afterwards, we welcome everyone to The Dough Room to get their hands dirty. Using a 'mattarello,' or elongated rolling pin, guests will get to experience the real art of handmade pasta no pasta machines!
At the end of class, participants will sit down to a dinner prepared by flour + water, including wine pairings.
To this day, Executive Chef Thomas McNaughton attributes much of his inspiration for flour+water to the opportunities he had while in Bologna, learning under the craftsmanship and passion of the Tori family.

Classes will be held at 6:30pm, and limited to 10 guests each, on the following dates: Monday, October 8 Tuesday, October 9 Wednesday, October 10
Price is $250 per person, exclusive of state tax.
