The Pines is thrilled to welcome Taller  the acclaimed Copenhagen restaurant rooted in the Venezuelan kitchen  to Brooklyn for a one-night only 9 Course tasting menu

On June 15, Taller Chef Karlos Ponte and team will serve a version of their inventive menu translated to the Northeast, marrying imported and local ingredients: from pampura and caviar on Venezuelan corn crackers, to grilled white asparagus dusted with coffee and Brazil nuts.

Grilled Passion Fruit, with cold passion fruit chichi

Oyster Tartar with Mango, ham, chili oil, pickled onion, epazote, yuzu granite angostura bitter

Pampura & Caviar, herbed butter, tomato balsamic

Grilled White Asparagus, dusted with coffee and Brazilian nuts

Fermented Venezuelan Sofrito with Steam, charred onions, ají dulce and casaba

Black Lentil Noodle, chili, egg, grilled vegetables in bouillon

Lamb, Yuca & Guasacaca, cassava root charcoal

Cookie Dough & Pineapple Sorbet, woodruff and Spanish chervil powder

Guanabana, Avocado & Mate, soursop sorbet, lime leaf powder

TALLER serves high quality food with its roots in the Venezuelan kitchen,which is as diverse and fascinating as the Venezuelan landscape, with its Caribbean shores, dense Amazonian jungle, vast grassy plains and the towering Andes. The name means workshop", and the idea of the kitchen as a workshop is crucial for the way food is prepared and served at TALLER.
At TALLER, the process of cooking is seen as closely related to more traditional art forms: the creation of food is not different in kind from the sculptors creation of the sculpture or the painters creation of the painting. Our "workshop" is also a place for exploration: In our kitchen,we we play with both new and traditional culinary techniques, possibilities and combinations. It is also true for the guest, who will explore new cultures through new flavors. This is where we reach one of the most fascinating aspects of food: through local produce it is possible to travel to completely different cultures throughout the world.
